Beyond Brunch Detroit’s January Event Recap

This past Saturday, Beyond Brunch Detroit (BBD) held our second event at Bobcat Bonnie’s in Corktown. Our expert this month was the amazing Consumers Energy engineer and founder of the Goal Getter Group, Jereshia Hawk. Jereshia shared her entrepreneurial experience and passion for helping female entrepreneurs achieve their goals and grow their side hustle with us. To say that we all walked away empowered and inspired is an understatement!

Having a side hustle while also working 9 to 5 is no easy feat. However, with a structured business plan and a marketing plan to match your business’s needs, you will be thriving in no time. If you’re interested in  building your side hustle, check out Jereshia’s website (hyperlinked above) to become a Goal Getter today!

Now let’s talk food!

Bobcat Bonnie’s is located in Corktown, a historic district just west of Downtown Detroit, MI, and has one of the coolest atmospheres I’ve ever experienced with a ton of character. Board games, trivia nights and $3 build your own Mimosa & Bloody Mary bar are just a few reasons Bobcat Bonnie’s has become one of my new favorite restaurants. They boast an expansive beer menu and some amazing food (just take a gander at the brunch menu below). I highly, highly recommend checking them out next time you’re in town.

My meal included the meaty omelette sans onion which came with a bowl of fruit, & I added a side of house fries.
I’m so blessed to be surrounded by such inspiring, confident women!

Beyond Brunch Detroit Event Recap

In a previous post, I discussed a professional women’s networking event my friend and I co-founded titled Beyond Brunch Detroit. In a nutshell (if you’ve yet to read my post), we wanted to create an informal environment where professional women from various sectors could come together, talk business and network over brunch – because, well, who doesn’t love brunch?!

This weekend, we held our first event at La Dulce in Royal Oak. Our guest speaker was Nikki Little, Social Media Director at Identity Public Relations; it was such an awesome opportunity to engage with her and learn from her story and career experience. It was great meeting a number of women from different fields, as well as having a number of our sorority sisters who came out to support.

Of course, being at a new restaurant, I have to talk about the amazing food. I tend to be a bit of a picky eater, so when I saw what the limited banquet menu had to offer, I got a little nervous. However, everything I had was absolutely spectacular!

For the first course, we had the choice between the house salad, brussel sprout salad, or pumpkin soup. I chose the brussel sprout salad which consisted of shredded brussel sprouts, grated cheese (tasted like Parmesan), toasted pine nuts, and a lemon viniagrette. I’d give it a 9/10 mostly because the vinegar overpowered the lemon a bit too much for my liking, but I got over it fairly quickly.

First course: Brussel Sprout Salad

The main course featured five choices (see menu above). While many opted for the lamb burger, I went with the garlic shrimp and rice. It was absolutely fantastic, 8/10 only because it did not fill me up and tasted phenomenal!

Second Course: Garlic Shrimp

The third and final course was dessert. I got super excited when I saw beignets on the menu because I’ve been having withdrawls from New Orleans. However, they are not the same beignets you’ll find in NOLA; 1/10 for disappointment, but 10/10 for taste.

Third Course: Beignets

Overall, it turned out to be a successful event, and we are so incredibly excited for our next event. Be sure to sign up for our bi-weekly newseltter and follow Beyond Brunch Detroit on social media!

Dining Destinations: White Horse Inn

Dining Destinations: White Horse Inn

On Saturday I joined my boyfriend and his family for dinner at the historic White Horse Inn in the small town of Metamora, Michigan. Recently renovated, the restaurant’s decor nods to Metamora’s equestrian history and Michigan’s plentiful natural resources. My dinner included New England clam chowder, mac & cheese, a mint julep, and a warm, freshly baked chocolate chip cookie for dessert. I was definitely not disappointed! Good food and a phenomenal atmosphere, the White Horse Inn is one of Michigan’s oldest eating establishments that you won’t want to miss!

Coastal Cuisine: Shrimp Boil Foil Packs

Coastal Cuisine: Shrimp Boil Foil Packs

Hello everyone!

As we’re all coming down from our 4th of July high and are headed back to work, I thought I’d share one of the amazing meals my family had this weekend. Inspired by a video from Delish on Facebook, we put our own little twist on the delicious dish!

https://www.facebook.com/plugins/video.php?href=https%3A%2F%2Fwww.facebook.com%2Fdelish%2Fvideos%2F10154268017647437%2F&show_text=0&width=400

Since my family loves seafood, my dad added lobster and scallops to some of the packets. One of the great things about this meal is that you can change up the packets to each person’s personal preference of food. It turned out to be an absolutely fabulous, healthy summer meal that everyone couldn’t get enough of!

Fall Favorites

Hello

Hello Friends!

Fall is officially here in Michigan and I could not be more excited since it is my absolute favorite time of the year! In celebration, I thought I’d share some of my favorite things about fall and things that I am obsessed with at the current moment in time.

Chunky Cable knit Sweaters// They can be layered with an adorable pair of boots and jeans or just paired with leggings. My go-to place for amazing sweaters is J Crew!

Fleece Pullovers// Continuing the theme of comfy garments, I’ve always been a huge fan of your average crew neck and quarter-zip fleece, but I’ve never known love until I bought my Patagonia Snap-T Fleece Pullover. Okay, maybe that’s a tad over-dramatic, but, in all reality, it’s quite fabulous and I highly recommend checking it out!

Cider Mills// This really speaks for itself, the best fall past time in Michigan; donuts, caramel apples, and warm cider…. Nothing beats it!

Guacamole Chips// Okay, so it’s not quite fall themed, but they are one of my latest obsessions. If you enjoy tortilla chips and guac, you’ll LOVE the organic twist by Food Should Taste Good. I’ll admit, I was a tad apprehensive initially, but I ended up demolishing the whole bag with my friend. Yes, they are that good!

Quilted/Puffy/Fleece Vests// Last, but certainly not least, I find it quite essential to have, at least, one vest to sport during this time of the year. Vests are perfect for layering on particularly chilly days; it’s no surprise that my favorite comes from the store that holds my heart: J Crew!

What are some of your favorite fall things? Comment below and don’t forget, sharing is caring!

Allow Me to Introduce Myself….

Allow Me to Introduce Myself….

Hey! What’s Up? Hello!

Welcome to my not-so-new, but definitely improved blog: With Love, Koko Beth! I originally started this blog as a college freshman in my second semester with no idea what to write about or where to even begin. I started writing about my favorite fashion trends and designing different outfits, but after nearly three years of that, I decided I shouldn’t limit myself to only fashion, no matter how much I loved it. While I refuse to give up on fashion completely, I will now include my favorite foods, drinks, music, television, and whatever else I may want to share on my blog (yes, this includes politics and pop culture)!

To begin, I figured I would get you more acquainted with me by sharing a little bit about myself and including a few fast facts. My name is Kourtney, and I am a senior at Oakland University studying Communication and Public Relations. I am a member of the competitive dance team on campus, as well as an executive board member of my sorority. In my free time I enjoy shopping, Pinterest, spending time with my friends and family, traveling, dancing, eating, and blogging. Something about me that most people don’t know is that I am a HUGE history nerd and love documentaries.
